Easy Peasy Party Appetizer #1

This is the first of three posts concerning easy peasy appetizers good for a party.

The Tony Awards air this Sunday evening, June 11!  The Tony awards are always exciting and wonderful to watch.  If you are a theatre geek you know what I mean.

Let’s face it, though.  Any award show is better to view if there is a party surrounding it.

Right?

Since I’ve been involved in theatre since before we had dirt, I know a recipe or two that are guaranteed winners for an award show or cast party. Here is the first one.

I remember the party when I tasted this dip.  I thought the idea of putting a reuben sandwich into a dip was pure genious.  Who doesn’t enjoy a reuben?

My husband is a connoiseur of reuben sandwiches.  He can afford to be one, too.  The man is as slim as the day I married him.  (That just isn’t fair, I don’t think.)

If you need a quick dip for a party, in particular a cast party and you want to make points with everyone, take this one.

Easy Peasy Appetizer

Hot Reuben Dip

1 8 oz. block of cream cheese

8 oz. of deli cut corned beef

1 cup swiss cheese

1/2 cup sauerkraut

1/4 cup sour cream

1/4 cup Thousand Island dressing

Preheat oven to 400 degrees.

Mix up all the ingredients and spread into a glass dish which has been sprayed with cooking oil.

Bake 15 to 20 minutes.

Serve with crackers or mini rye bread.

So there you have it–an easy peasy appetizer.

I hope you enjoy the Tony awards as much as I will.  They always restore my faith in the performing arts, specifically theatre. Since I have students and friends who work on Broadway, it is super exciting when I see them on the Tonys.  For me, the Oscar awards come and go (I understand they are very political) but I truly appreciate the Tony’s.
